In the Land of Buckeyes


That's where I am living right now, in the land of buckeyes. If you have been following me on facebook or twitter, you know that I have been blowing off work to crochet snowflakes and make these buckeyes. We are having our annual Christukkah party on Saturday and who knows what inspired me to make these Ohioan treats.

Here's our Chachula family recipe (modified slightly).

What you need:
1 1/4 cup peanut butter (i like the crunchy kind for texture)
3/4 cup butter
3 cups confectioner's sugar
cookie sheet
parchment paper
2 packages of Bakers Chocolate
toothpicks

Directions:
1. Blend well peanut butter and butter together. I do this with my mixer on full speed.
2. Slowly add in sugar. I turn down the speed to low and add about 1/2 cup at a time.
3. Place mixture in frig for 30 minutes or so (until you can form it into balls).
4. Line cookie sheet with parchment paper.
5. Roll mixture into 3/4 inch balls and place on cookie sheet
6. Cover and place balls in frig for about an hour to set. (longer the better)
7. Melt chocolate according to package directions (for me it's about 1.5 minutes on high in the microwave) Note- if you can't find baker's chocolate you can use one bag of chocolate chips and one tablespoon of shortening. Microwave on high for 30 sec at a time till melted (I don't think it tastes as good as the bakers though)
8. With toothpick, dip balls in chocolate and re-place on cookie sheet.
9. Cover and place in frig over night to set.
